a prescription for happiness…Eat Gelato!

Well at least that was the case today…I had my annual follow-up with my endocrinologist.  Things went as I expected…good results all the way around.  Well with the exception of the weight I have gained over the past 2 years.  In my doctor’s opinion it is minimal but still encouraged me to increase the amount of exercise I am getting.  For me that means I am starting from scratch.  I think I will finally set up the wii game and have a little fun while increasing my exercise program.

Of course it will be a couple of days before the test results are in and I know if there will be any adjustment to my medication.  Also, I will find out about my good and bad cholesterol.  So until all the results are in…I wrote myself a prescription for a little happiness!

There is almost nothing quite as wonderful as an ice cream parlor except maybe a Gelateria!  Piccomolo Italian Ice Cream  has it going on…the folks at Piccomolo have created the perfect ice cream experience.  They have combined the fun that comes with eating ice cream with the feel of a grown up space like that of a small cafe or coffee shop. You are encouraged to linger…as long as you like.

From the moment you step through the door and out of the 100 degree Texas summer heat your happiness gauge begins to increase.  The space is cool and inviting.  The stress of the day immediately begins to melt away.  The color palette is soothing and creamy with small splashes of color.  Everything from the italian graphics on the table tops to the  perfect balance of natural and focused lighting invites you to slow down and enjoy the moment.  The Piccomolo experience is one you will look forward to time and again. 

Then your focus is drawn to it…the display case…filled with wonderfully creamy deliciousness…amaretto, birthday cake, butter pecan, coffee, cookies and cream, coconut, donatella, peppermint, pina colada, pistachio, roasted almond, apricot, banana, cherry and kiwi to name  just a few.   How will a girl decide?  One small taste at a time, that’s how.  

Then the inevitable moment comes…you must make a choice or two.  No matter the flavor you choose you will not be  disappointed. Do not let the many choices give you a moments pause.  There is always another day and another flavor combination that will bring a little happiness into your afternoon.   My choice, today…coffee and donatella(chocolate with hazelnut)!!!  DELIZIOSO!!!!

white pizza…caramelized onions and arugula

 One of the most enjoyable pizza’s I have experienced was a  Neapolitan style pizza with taleggio, truffle oil, arugula and pear  at one of America’s best  pizzeria’s, Pizzeria Dolce Vita.   I have been fixated on this incredible creation for months. 

 Recently my husband and I were working to create a menu for an upcoming event. I decided to give the white pizza a try.  We used store-bought pizza dough and ingredients we had on hand.  Next time will be different….very different. This version did not make the menu for this particular party.  However, I see a game night in the near future and there will be a white pizza on the menu. 

1 pkg store-bought pizza dough
1tblsp butter
2 tblsp olive oil
1 med onion thinly sliced
2 cups of arugula
1 tblsp of rosemary
1 cup of shredded italian cheese


Roll out the pizza dough on your favorite pizza stone.  Cook for 5 minutes.

Combine butter and olive oil with slice onions and cook on low until onions are soft and caramelized. 

Add arugula and cook until wilted.

Drizzle the pre-cooked pizza dough with evoo.

Sprinkle spices and rosemary on the precooked dough.

Layer the remaining ingredients; cheese and onion-arugula mixture, cheese…

Cook for 12 – 15 minutes.

 This is the photo before going into the oven.  The aroma was so enticing I completely forgot to take the “right out of the oven” photo.  The recipe and instructions reflect the changes I would make the next time I make this delicious pizza. 

 My first attempt at the “white pizza” was delicious but the amount of cheese I used was entirely too much.  I would have enjoyed it more had the onion and arugula been the predominant flavors.  I am looking forward to making this recipe again…very soon…with a few more changes. Hopefully it will at least include all of the ingredients from my pizza inspiration.

Future ingredients may include; prosciutto, gorgonzola, garlic infused evoo, shrimp, andouille, shallots and diced tomato.

Well today was the Big day!  It came and went without too much attention, a lot like this post.  I received a card in the mail, numerous Facebook well wishes and a few text messages and a spattering of phone calls.  My mother recounted the ordeal of my birth. My Dad told me the same story he tells me every year.  My husband showered me with wonderful gifts and the sweetest card, the kind that tugs at your heart-strings.  This year I managed not to cry.  He also found the perfect humorous birthday card.

Blog postings….MIA

Thanks for stopping by the Blog…I have been MIA this past week.  Hopefully things will settle down soon. 

Typically summer is the quiet time for me…I prefer vacationing in the winter, so it’s not vacation that’s got me running crazy!  Also the summer months are typically a time for me to get some “housekeeping” done at the office.  I try to take some sort of physical inventory in the bookstore during the summer and run a few sales to clear out old inventory.  This year the task is proving to be a bit more of a challenge. 

I am taking the advice of a respected colleague in the bookstore industry to create a more productive and better planned out inventory process.  However, this takes a lot of effort up front to implement.  I am willing to put in the work to ensure that in the end we will have excellent results. 

On top of all that is going in on over in the bookstore…the cafe is undergoing a bit of change itself.  We all know that in this economy every penny counts. I have been auditing one of our vendors and have decided that a change is in order.  This can be an arduous task; comparing every single item by size, quantity per case and price per piece.  However, in the end the savings will be significant. 

With all of this said…you are now up to speed as to where I have been instead of visiting your wonderfully insightful, encouraging and humours blogs.

The NBA Finals…Game 2 …5 Things to Know and a little b-ball trivia

Before I get to it, I just want to say that I am extremely happy that I am not having to watch the Kobe show! 

Game 1 was the Wade and James show!  What will Game 2 bring?  Here are a few contributing factors to tonight’s game…

Under the current 2-3-2 format, a team with a 2-0 lead in the NBA Finals wins the title 93.3 percent of the time.

  • Dirk Nowitski, torn tendon left middle finger – According to Dirk there won’t be a problem with the shot!
  • Miami , won each of its post season home games, 9-0
  • Maverick , 17 pts off the bench in game 1, worst in post season
  • Lebron has hit 16 of his last 30 3pt attempts
  • Miami – 5 second half comebacks in this post season

Should the Mavericks win Game 2, the winner of Game 3 has won the series 100 percent of the time, posting an 11-0 mark under the current 2-3-2 format.

No teamhas ever come back from a 3-0 deficit in a playoff series. The 1951 New York Knickerbockers, the 1994 Denver Nuggets, and the 2003 Portland Trailblazers came back from a 3-0 deficit to tie the series at 3-3, but neither won their respective Game 7.Eight teams, however, have rallied back from a 3-1 deficit. pull up a chair…no robes, no chanting, no incense required

 

Lately I have been feeling as though my mind has gone on vacation and it forgot to take my body along for the ride.  I am not sad or depressed I just lack focus. I sit at my desk and stare at the computer screen and nothing happens.  I look at the stack of papers on my desk and I can’t decide what to do with them. 

What is my problem?  Could it be that my mind is so filled with clutter or could it be a lack of inspiration?  Maybe it’s the fact that I will turn 50 on my upcoming birthday and I am in denial and the best way to deal with that is by zoning out.  Or do I hear you screaming at the computer screen “it’s menopause!” (Say it ain’t so Joe)

Whatever it is…Its time for a change…

I think what I need is to carve out some time for meditation…extreme quite time, controlled breathing and a clear mind. 

Meditation was once considered extremely flakey, practiced by hippies in incense filled rooms.  It is now being used by the military, corporate america, students and patients. 

Meditation can help control your heart rate, breathing and relaxation. 

Health care providers are increasingly suggesting that patients use meditation to improve their health. 

Here’s how:

  • Find a comfortable seat.
  • Just breathe!
  • When your mind wonders as it will just gently return to your breathing.

Carving out 30 minutes a day will reduce your blood pressure, boost your self-confidence and make you a nicer person.  Now who couldn’t use a little bit more nice in their life? 

No Robes, no chanting, no incense, no fees or mats and no religious groups required.  Just breathe!
